The Chicken Shack Story
Nestled inside the front corner of Lillie’s Q, the LQ Chicken Shack has officially opened its window and the fried chicken is flying the coop. Chef Charlie McKenna’s smoked fried chicken was introduced to the world in early 2011 when it was put on the in-house menu at Lillie’s Q. The guests raved about the unique flavor of the chicken but squawked at the limited quantity they could only acquire in the restaurant. So, McKenna decided to build a second kitchen, whip up some new sides and the LQ Chicken Shack is now open for business.
McKenna, who has won numerous awards for his slow-smoked meats over the years, uses his expertise to create a smoked-then-fried chicken that is unlike any fried chicken on the market. He smokes the birds at a low temperature before removing the skin and battering them in a satisfying southern mixture of flour and spices. Stop by for a bucket and grab some signature sides such as biscuits with honey butter, potato salad or stone ground grits.
